Hey folks... this is a whopping 1 lb chub of meat! We don’t put “junk” or “leftovers” into our summer sausage. This is 100% buffalo meat. We don’t use fillers of pork or beef to lower the quality and the nutritional value of this product, either. Because of this, you’ll notice that the typical greasy feeling left in your mouth with most summer sausage is non-existent with this product.

Our chickens are raised in floorless "tractors" that are moved to fresh grass daily. The chickens "free" range in the daytime and bed down in these floorless "tractors at night. Their diet consists of grass, bugs, and a mineral-rich, hormone- and antibiotic-free custom-mixed ration. Our ration is not organic, but we do grind all of our own feed so we know exactly what goes into the ration. The chickens are processed on the farm to ensure a clean and low stress environment. You can taste the difference.

Oh yeah… check out the picture. I actually cooked that! Buffalo roasts are becoming one of my favorite foods because they’re so easy to prepare and oh-so-good! I throw mine in a crock pot with some pineapple/apple juice and water, onion, carrots, and potatoes and turn it on low when I go to sleep at night. By the morning… well, let’s just say that I can’t resist eating roast for breakfast! No knife required for this meat! In fact, have a spoon ready. It's so tender, it'll slip through your fork! I’d guesstimate that one of the roasts would feed approximately 4 adults, or one L.C. Ratchford for three meals in one day!

Well, don’t plan on making any gravy with the grease drippings from this breakfast sausage, because there won’t be any! Remember… buffalo is so much leaner than beef and pork that you won’t have any grease when preparing this breakfast sausage. If there’s anything bad to say about buffalo, it’s that it can get dry because there’s very little fat in it. (And we don’t add any because we want to keep it natural.) Just be sure not to overcook it. When cooking any buffalo product for the first time, check it regularly to remove it from heat at exactly the right time.

Awww yeah! Fry 'em up and pour some gravy on 'em! Or better yet, just marinate and throw them on the grill for a quick meal. You'll love these cube steaks. Do you know how much healthier buffalo is than beef? (We raise moo moos too, however, we have to spill the beans.) One cup of ground beef, for instance, has nearly 22 grams of fat. That same cup of buffalo - less than 3 grams of fat. We ain't kidding ya! Check out the Federal Food and Drug Administration's website if you don't believe us.

Cooking buffalo is pretty much the same as beef. You just have to remember not to over-cook it because it’s so lean. Slow and low, my friends. My favorite way to cook these steaks is in one of those small (personal-sized) toaster ovens because it’s fast and clean-up is easy. I place two seasoned steaks in the little oven and turn the dial to broil. 8 minutes on side one, 7 minutes on side two and it’s ready to go at medium-well if you like it that way.

Okay, here's something we're trying for folks who would like to tiptoe into the wonderful world of buffalo. We're offering a *few* sampler packs at a significantly reduced rate to see if we get any takers in this week's market. First come, first serve! We realize that lots of you are habitual buffalo eaters - and you're more than welcome to buy this pack as well. For you, or for our soon-to-be converts, our hope is to give a wide variety of the cuts of meat so that you can find your fave. (Well, we have to be honest...we're really doing some crazy buffalo psychology on you because we know that you'll love it all.) So here's what you'll get... 1 lb breakfast sausage; 1 lb cube steak; 1 lb ribeye; 1 lb kc strip; 1 lb porterhouse; 1 lb shish kebab or stew meat; 1 lb sirloin steak; 1 lb ground; 1 lb pre-made patties (3 patties). **Remember that the cuts vary slightly, so you may get slightly more or slightly less than 1 lb. We try to go for the "more" side whenever possible. So, if my fingers don't lie, that's 9 lbs of meat! Enjoy!!!

Only temporarily out of stock! We know summer isn't the typical time for stew, however, it's so darned good that you should really reconsider. It's like wearing white shoes after labor day. Women folk say you shouldn't do it, but we all break the rules anyhow. :) So go ahead and commit a gourmet faux pas (bet y'all thought I'd spell it "fo pa" didn't ya?) Heck... get the stew meat and make shish kebabs for goodness sakes. Saves you the cuttin' part.

With Ratchford Farms products, you don’t need to wrap a paper-towel around your food to keep grease from dripping on ya! Our snack sticks are (again) not greasy because we don’t fill them with the by-products from other animals. I’m a country boy, don’t get me wrong, and yeah, I sometimes eat things that have probably been in the fridge too long, but loading up a good piece of meat with byproducts is just wrong!
