Not only is that the ethical way to raise beef, it also results in a higher quality cuts of meat. Taste the difference when you try our brisket! Smoke it or put it on the grill...or simply cook it in the oven (Marinate with your choice of seasonings overnight. In the morning, drain the marinade and sprinkle the brisket with worcestershire sauce. Wrap in foil and bake at 250F for 6 hours. Unwrap brisket, pour a bottle of your favorite bar-b-que sauce on top and return to the oven for an hour.)

While we're usually a little humorous in our descriptions (or we attempt to be) here's the unfunny truth: our animals drink clear-running spring water, roam leisurely on our farm, eat grass and are not subjected to the typical steroids, antibiotics and hormones typical of beef bought in the grocery store. They live a stress-free life and we never use a cattle prod on them. Native American Indian wisdom tells us that we are to treat God's animals with respect, and we take that part of our job seriously. That may mean doing things the hard way, but we think that our ethically raised beef is a higher quality product because of the extra TLC we give our livestock. And because they're naturally raised, they give us cuts of beef that are lower in total fat, higher in vitamins and minerals, and loaded with Omega-3 fatty acids.

Sometimes called a "Top Blade Steak", this cut has been called "perfect for the grill" because of its uniform thickness. Marinate and grill over medium high heat. Try substituting Flat Iron Steak in recipes that call for skirt or flank steak.

Football idea: cut these awesome cube steaks into strips, LIGHTLY bread them, and fry them up for the football games on Sunday. Pile them on a platter and put out several different dipping sauces like ranch, bar-be-que, honey mustard, etc. Be creative! It's like an instant "buffet". (Get it? BUFFet? BUFFalo? We're laughing at least.) And the good thing is that you're eating healthier without giving up ANY taste at all. Have fun!

And let me mention that the mornings are getting cooler and pretty soon we'll be sleeping soundly with our windows open at night to catch the cool breeze of fall. Use this meat as shish kebab OR stew meat. A good pot of "buff stew" would be a great and healthy meal.

Yeah, I know it's not "falay min yawn". These delicioius filets are a new addition to our product line-up and we're bringing them to Conway Locally Grown customers first! Be the first to get your lips on these! Do you realize how much healthier buffalo is than beef? (We raise moo moos too, however, we have to spill the beans.) One cup of ground beef, for instance, has around 20 grams of fat. That same cup of buffalo - less than 3 grams of fat. We ain't kidding ya!
