Garlic Roasted Eggplant

1 eggplant, cut into large strips or slices
3 tbls olive oil
1 clove garlic, minced or 1/4 tsp garlic powder
sprinkle Beaverfork Blend and/or sea salt, on top
sprinkle parmesan cheese, grated
sprinkle fresh herbs, chopped (basil, oregano, rosemary, sage, thyme)
Step by Step Instructions
- Preheat oven to 400 degrees F. Lightly grease a baking pan or put parchment paper on top of a baking pan.
- Lay the eggplant on the pan evenly. In a small bowl, combine olive oil and garlic. Drizzle the garlic olive oil over the eggplant. Lightly dust with salt and bake for 15 minutes.
- Then turn the eggplant over and bake again for another 10 to 15 minutes or until the eggplant starts to get a nice deep brown color on the edges.
- Take out the eggplant and put on a serving platter. Sprinkle with parmesan cheese and herbs. Enjoy!
