In tribute to Rosie, our mascot, our beautiful, one-legged, one-winged hen, we insist on keeping her line of small and bantie eggs available. Rosie was one heck of a chicken and is sorely missed. This is her story. One day, Nathaniel, owner and operator of Funny Farm, found Rosie, a bantie hen, in a mud hole inside the chicken coop, completely covered in mud, and looking dead; but she gave a little squawk when he gently nudged her with his toe. So, Nathaniel picked her up, gave her a warm bath, and put her by herself with a space heater nearby, to see if she would recover. She did, but to the astonishment of the farm workers, was missing one leg and one wing! Since there were raccoon tracks all over the place, it was assumed that one had grabbed her through the space between the door and doorframe, but she had managed to escape and fell in the mud. The mud probably saved her from bleeding to death. Anyway, she became Nathaniel's pet and a fixture of the farm. In gratitude, she started laying these cute, little eggs. So, Rosie's Small and Bantie Eggs was born and has been sold off the Extras Table. But, now, with the presence of over 30 chicks just starting to lay, the number of cartons has suddenly grown. These eggs are small but delicious; and Rosie always insisted that they be sold at a decent price. Enjoy! Sweet and Spicy say everything about these peas. They have lots of taste cooked in already!!! The peas were grown by Healthy Flavors Arkansas in the Lollie Bottoms here in Conway. The recipe was developed by students at the Brightwater Center for the Study of Farm and Food in Bentonville. They are fully cooked and shelf stable. You can heat them and pour them over pasta or rice, eat them on eggs or toast, or use them as a garnish for hot dogs or in a wrap-type sandwich. Choose your adventure!!! They are in a 16 oz jar.
